The kneaded dough is slightly rounded by hand, covered with a lid, and the “fermentation” procedure is started for the first basic fermentation. The fermentation time is set to 1 hour 30 minutes to 2 hours, and the dough is fermented to two or three times the original. Big enough. Note: 1. When the dough is fermented two to three times larger, proceed to the next step. Matters needing attention: 1.
