I have tried many online recipes, which is done according to Lancome’s prescription. It is closest to the local taste of Nanjing.
Wash the duck legs and soak for one hour in clean water. Use kitchen paper towels to absorb moisture.
Stir-fry the pepper and salt until the color is slightly yellow, and pour it on the duck leg. Slightly cool and full.
Soak the clear water and add more salt to boil, and remove the floating foam. Add two slices of ginger, 2 onions and 2 octagonal. Turn off the fire and let it cool. Soak the marinated duck leg for one hour.
Take out the duck legs and let them dry. Usually one night.
Boil the water, add 2 octagonal, 2 onions, 2 slices of ginger, boil, add to the duck leg and boil for a while, turn off the heat for 20 minutes.
Remove the duck leg, boil it on the fire, then add the duck leg and simmer for 5 minutes. Turn off the fire for 20 minutes
Remove the block after cooling.
The soup of boiled duck can be used as a hot pot, very fragrant.
